About Executive Chef Mike Genest

Homegrown talent, Mike was raised in North Vancouver’s Deep Cove neighbourhood.  Some of his earliest memories are of sharing the kitchen with his mom and nana.  By the time he reached high school, food had become a passion:  after school on Fridays he and his friends would go straight to the grocery store to pick up barbecue supplies, and then spend their evening around the grill.  He says he knew that if he made cooking his career, he’d love it.

Mike started his formal training at the Pacific Institute of Culinary Arts in 2005.  While a student, he also cut his teeth by working as Sous Chef at the Arms Reach Bistro in Deep Cove.  He subsequently took on the role of Executive Sous Chef at Sonora Resort Canada (Relais and Chateaux) on an island off the coast of Vancouver Island.  He enjoyed the remoteness and seclusion of the resort, and when time came for a change he found himself drawn to Hart House because of its idyllic Heritage House setting beside Deer Lake.

Mike characterizes his cooking style as West Coast, but he loves travelling and as a result his cooking has been influenced by cuisine around the world.  He lived one of his dreams in 2010, when he attended a three-month program in Southern Italy’s Calabria district studying regional Italian cuisine and wine.  He brings his unique combination of global influences and local sensibilities to his role as Executive Chef at Hart House.   The position allows him to cultivate relationships with local suppliers – he loves West Coast seafood – as well as getting his own hands dirty in the estate’s on-site herb garden.

In his spare time Mike enjoys playing guitar, fishing, hiking and spending time with his girlfriend Trish.
